Alex consulted Chef Bobo’s Good Food Cookbook: Smart Recipes for Happy Healthy Kids and chose spaghetti with turkey meatballs, which she and Max made, along with fresh shelled green peas, green salad and oatmeal cookies two ways: oatmeal-raisin and oatmeal-chocolate chip. Everything was delicious. The turkey meatball recipe is delicious and straightforward to prepare (although Alex wore goggles to cut the onions:).

    Recipe for Turkey Meatballs (based on turkey meatball recipe in Chef Bobo’s Good Food Cookbook)

    Ingredients:
    3 Tablespoons Extra Virgin Olive Oil
    1/2 Cup finely chopped yellow or white onion
    1 Teaspoon finely chopped garlic
    1 pound uncooked ground turkey
    1 Tablespoon finely chopped fresh oregano (NOT DRIED)
    1 Tablespoon finely chopped fresh basil (NOT DRIED)
    1/2 cup soft bread crumbs (smaller than pea-sized)*
    *1/4 cup dried bread crumbs if necessary
    1/4 cup milk
    1 egg
    Salt & Pepper

    1. Wash hands

    2. Heat 1 Tablespoon olive oil on medium: add onion and cook & stir for 2-3 minutes; add garlic and cook another 2-3 minutes until tender but not brown (careful garlic browns quickly). Let cool.

    3. Soak bread crumbs in milk.

    4. Combine turkey, oregano, basil, then add to turkey mix along with egg and cooled onions. Season with salt and pepper. Mix well. Shape into 1 inch balls and place on lightly oiled baking pan. Cover and refrigerate. If mix seems too sticky and liquid, add 1/4 – 1/3 cup dry bread crumbs. Makes it easier to handle meatballs.

    5. Wash hands again. (WITH HOT WATER AND SOAP)

    6. Heat remaining 2 tablespoons oil on medium; place meatballs in pan gently and brown on all sides (use tongs to gently move them around; don’t over pack the pan otherwise its hard to move them and they stick together). Bobo’s recipe said it took 15 minutes to do this, but kids found it to be around 10 minutes.

    7. Add 2 cups of your favorite marinara sauce** and let meatballs simmer in it for 30 minutes. Cut one in half at end of 30 minutes to make sure cooked through and to taste…every good cook tastes along the way!

    8. Cook pasta per directions on box….put it all together with some parmesan cheese.

    **Max has a good recipe for marinara sauce! Let him know if you want it.

    That’s a good recipe I can’t wait to try it at home with my family. I bet Max and Alex did a great job on it there amazing cooks. I hope we can come again soon to try some of Max and Alex’s delicious foods or maybe you guys could come cook over at our house!
